Our Story

Our story began in early 1996, when our co-founding husband and wife team, Betty and Garry Wilkins made the commitment to pass on a family rum cake recipe to people who love to enjoy Caribbean food and its accompanying emotions. Their goal was to build the highest quality rum cakes available in the entire Caribbean. Two years of research and setup turned a family tradition into a product that could be reproduced yet would retain its home-style quality and taste.

In 1998, Calypso Bakeries Ltd. opened its headquarters just outside of the Barbados' capital city, Bridgetown. The name Calypso was chosen as it encompasses not only the island of Barbados, but also symbolizes the spirit of the Caribbean. This is especially true for the world famous Calypso music that is played with steel drums and satirical ballads so distinctive and loved in the Caribbean.

With the production of the original flavor, Vanilla, Calypso Bakeries Ltd. experienced immediate success throughout the island of Barbados. While the Vanilla is still the most popular customer choice, we quickly added new flavors such as Chocolate, Lemon-Ginger and Coffee. While all flavors fall under our highest quality standard of true Caribbean taste, our founders are constantly testing new additions to our cake family.

In 1999, we established production compliance with international food safety standard, HACCP, a hazard analysis and control certification. We are also a FDA registered company giving customers worldwide peace of mind. This provides our customers with the guarantee that our entire baking process, including vacuum sealing, boxing and wrapping, ensures highest quality standards.

The main ingredient that sets our cakes apart from all the others is a 10-year aged Golden Rum, made and completely processed in Barbados. The pure form of this world famous rum is not available internationally. In fact, most islands buy their rum from Barbados and either bottle or mix it in their country. A combination of this highest quality rum and our commitment for highest cake moisture has made our product known worldwide. Our production methods, such as hand-ladled glaze, are labor intensive differentiating our cakes from any mass-produced item and giving you the authentic home-style Caribbean cake.

Besides our bakery location, we initially started with our own retail store, which still can be found in the Barbados cruise terminal. However, our cakes were soon in demand throughout the entire island. Now, tourists and locals can find them in most local shops and grocers.

It didn't take long until past cruise ship customers wanted to bring home some holiday memories. We soon received worldwide orders that allowed us to open an international distribution office in the United States. You can now find our cakes in department stores, supermarkets, gift baskets and hotels worldwide. By truly embracing the Internet, Calypso Bakeries Ltd. has not only morphed itself into an upcoming global enterprise but also into a continuously family-owned entity that is able to keep its original promise:
